1 cup coconut water
1 1/2 cup almond milk
3/4 cup young coconut meat (you can purchase this at an Asian grocery market, or if you are using young raw coconuts you can scrape the white meat out of the inside with a spoon)
2 tablespoons coconut oil
1/4 cup maple syrup
1/4 cup date sugar
seeds from 1/4 vanilla bean or 1/2 - 1 teaspoon vanilla
In a high-speed blender, combine all ingredients and process until smooth. Freeze in an ice cream maker according to manufacturers directions.
