2/3 cup cold almond milk
2 large cold avocados
3-5 tablespoons melted honey, to taste
10-12 drops peppermint extract (adjust to your liking)
dark chocolate chips for topping (optional)
mint leaves for fun and more color (optional)
Mix all of your ingredients in a blender (omit chocolate chips and mint leaves until the end). Pour into ice cream maker and follow manufacturer's instructions. Scrape the sides now and then. When the ice cream is finished, you can add the little sprigs of mint if you wish - for eye appeal. Add your dark chocolate chips before serving. Enjoy!
