Paleo Chocolate Chunk Banana Bread

Ingredients:

4 bananas, mashed

4 eggs

1/2 cup almond butter

4 tablespoons coconut oil, melted

1/2 cup coconut flour

1/2 teaspoon cinnamon

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon vanilla extract

Pinch of sea salt

6 oz. dark chocolate, chopped


Instructions:

Grease a 9''x5'' loaf pan and preheat oven to 350 degrees F. In a large bowl or mixer, combine the mashed bananas, eggs, coconut oil, vanilla extract, and almond butter until fully combined.

Add the coconut flour, cinnamon, baking soda, baking powder, and sea salt to the wet ingredients and mix well. Fold in the chopped dark chocolate.

Pour the batter into the prepared loaf pan and spread evenly.

Bake for 50-60 minutes. A toothpick inserted in the center should come out clean when it's done. Remove from the oven and allow to cool on a wire rack for about 30 minutes. Move to a cooling rack to continue cooling.


Yield: 12 slices
