Hard-Boiled Eggs on Toast

Hard-Boiled Eggs on Toast

Ingredients:

2 large eggs

2 slices whole wheat bread (toasted)

1 medium avocado


Instructions:

Fill a medium lidded saucepan with 3 inches water and bring to a boil. Carefully add the eggs and reduce heat to low, cover and cook for 10 minutes. Transfer to a bowl of ice water for 2 minutes, then carefully peel.

Thinly slice eggs and layer over toast. Top with slices of avocado.
