Black Bean Salad for Your Bugs!!
This fiber-rich salad is delicious any time of the year and does an excellent job of providing nutrients for your intestinal bacteria to grow and thrive!
4 cups cooked black beans
4 tomatoes, diced
1 red bell pepper, diced
1/2 red onion, diced
1 1/2 cups corn, fresh or frozen
2 jalapenos, seeded and minced
1/3 cup chopped fresh cilantro
1 avocado, diced
1 teaspoon ground cumin
Juice of 1 lime
2 tablespoons extra virgin olive oil
Sea salt and freshly ground black pepper
Combine all the ingredients in a large bowl. Season to taste with salt and pepper. Set aside or refrigerate to allow the flavors to blend. Serve cold or at room temperature. Store refrigerated in an airtight container for up to 5 days. Serves 8!
