4 large, ripe bananas
2 teaspoons pure vanilla extract
1 teaspoon ground cinnamon
1 tablespoon honey or pure maple syrup (optional)
1/4 cup chopped walnuts
Peel and cut bananas into chunks. Spread chunks out flat on a sheet or parchment paper and freeze for 1 hour or until solid. Remove from freezer and place in a food processor with vanilla and cinnamon. Process in bursts at first, until bananas soften, then continuously until they become a creamy smooth consistency. Transfer to serving bowls, drizzle with honey or maple syrup if using and sprinkle with nuts. Serve immediately!
