Bacon Chips and Guacamole
8-10 strips thick cut pasture-raised bacon
1/4 cup red onion, chopped
1 tablespoon cilantro, chopped
1 tablespoon jalapeno, minced
1/4 teaspoon ground cumin
1/4 teaspoon sea salt
Preheat oven to 375 degrees F and line a baking sheet with parchment paper.
Slice each bacon strip into 2-3 inch pieces and lay on the baking sheet. Bake 15-20 minutes. Remove from the oven and allow the bacon to crisp up on a plate.
In a small bowl, use a fork to mash the avocados. Stir in the red onion, jalapeno, ground cumin and sea salt.
Serve bacon chips alongside the guacamole dip.
