1 cup all-natural almond butter
1/2 cup coconut palm sugar
1 egg, beaten
1/2 teaspoon vanilla extract
Preheat oven to 350 degrees F. In a medium-sized bowl, cream together the almond butter, the egg, and the vanilla extract until smooth. Fold in the coconut sugar and blend until combined.
One heaping tablespoon at a time, roll the dough into one and a quarter-inch balls, and place on a cookie sheet. Using the base of your palms or a fork, slightly flatten the balls to about a half-inch thick.
Bake for 8-10 minutes, or until the edges begin to brown. Remove the cookies from the oven and allow them to cool on the cookie sheet for at least 10 minutes before transferring to a cookie rack.
